How to Make the Best Gluten Free Chocolate Chip Cookies

I have loved chocolate chip cookies my entire life. But not just any chocolate chip cookie! I want them to be soft, chewy, and decadent.
A few years ago, I realized that I had to stop eating gluten. It was worth my particular health wins, but losing chocolate chip cookies was one of the losses.
Luckily, my niece created this gluten free chocolate chip recipe, and now I don’t have to miss chocolate chip cookies any more!
These are divine. Soft, chewy, and absolutely delicious. My niece says they are almost identical to the gluten-full chocolate chip cookies she bakes.
What Makes These Cookies Work?
There are a few things that make this recipe work. It has a lot of butter, and a lot of chocolate chips. We used Ghirardelli’s bittersweet chocolate chips, which were designed with this type of baking in mind. We use Cup 4 Cup flour when we bake them, because it’s the closest to traditional wheat flour in terms of taste and texture that I’ve found.
But the real secret is the flaky salt. Regular salt blends throughout the cookie, which is fine. But not divine.
Flaky salt creates that salty sweet deliciousness that makes a perfect chocolate chip cookie. So, if you’re a chocolate chip cookie snob like me, it’s probably worth buying some just to make these cookies!
Gluten Free Chocolate Chip Cookie Recipe
Thes soft and chewy chocolate chip cookies are our absolute favorite!
Ingredients
- 2 1/4 sticks of butter, softened
- 1 cup granulated sugar
- 1 1/2 cups brown sugar
- 2 eggs
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 2 tsp vanilla extract
- 1 tablespoon flaky salt (preferred) or 2 tsp normal salt.
- 3 1/2 cups flour (we recommend Cup 4 Cup flour for this recipe)
- 2 cups chocolate chips (dark chocolate is preferred)
Instructions
- Cream the butter and sugar.
- Add eggs, baking soda, baking powder, vanilla extract, and salt. Mix.
- Add flour. Mix.
- Add chocolate chips. Mix.
- Shape into balls and place on cookie sheet to bake. We do recommend using a silicone mat or parchment paper on your cookie sheet.
- Bake at 350 degrees for 10-15 minutes, or until the edges are golden brown.

I also recommend using silicone baking mats, or parchment paper if you prefer. It keeps cookie baking sheets pristine and makes it so easy to transfer cookies to a plate once they are baked!
