A Green dinner my kids will eat

I know I’m not the only parent who struggles to get their child (one child in particular) to eat anything other than cheese and yogurt, so I thought I’d share this recent household favorite. Spinach pasta is very simple: puree a bunch of spinach with a little salt and sour cream or plain yogurt, then add parmesan cheese, garbanzo beans, and shredded chicken. My kids like it better than pasta with pesto, and the iron content in the spinach is especially helpful since my fussiest eater is also slightly anemic.

  1. This looks yummy – I want to make it just for myself! I actually think Matthew might try this, despite the green color. Sounds delicious!

  2. Mine wouldn’t fall for that, but if I put raw spinach in salad they’ll devour it. Anything that is leafy and served in salad is eaten quickly.

  3. This looks really healthy indeed. Unfortunately, daughter is not a greens eater, but she does eat some other veggies. She prefers raw veggies to anything cooked.
